How the I change the color of the header text with the new customizer?

The best way to change header text colour is with custom CSS. This would do the trick:
h1#site-title a { color: #bb00bb; }You can change the example purple colour to any colour code you like.

Keep in mind that this older settings screen may conflict with the Customizer settings. To get around that, you may need to exit Custom Design trial mode, which you currently have active. To do that, follow these steps:
1. Open your site’s Customizer.
2. Open the section called “Colors & Backgrounds.”
3. At the top of that section, look for the text “This feature is a part of the Premium Plan. Purchase to make it live or exit the preview.”
4. Click on “exit the preview” to exit the Custom Design preview.
5. Open the “Colors & Backgrounds” section again and set your custom background for your site.
6. Click “Save & Publish” at the top of the Customizer. -
