  I want to exclude just one picture from the random mode.
  Is that possible?

  No it is not possible to exclude the display of any individual post from the random post display.

  If you want, you can delete that image from your headers.
  Go to your media in your dashboard.

  You can delete any header image from the display you have uploaded here Settings > Header by going for Dashboard > Media > Media Library and deleting it there.
