Help, why cant I add a category?

I have tried many times to add a category but am running against a blank wall. Ive managed to create the category and changed its name but even though I have created the sub-categories, it does not appear as drop-downs at the category.
Another issue is when I click on POST, the pages that appear are not what Ive typed as my Pages. And when I open them, they are empty. Should I go to my pages, there is no option for me to add a category from there.
How do I resolve this? Im very new to computer, so please use simple non-pc jargon.

I do understand that I need to have a post and categorise it before the category appears at the side bar but as mentioned, when I click on the POSTS, my pages do not appear… Hope Im making sense.
I am hoping to create a Brand category, with the names of the brands as sub-categories.

What you need to do is set the categories widget to show the hierarchy. Go to appearance > widgets in your dashboard click on the right end of the “categories” widget title bar to open it, then select “show heirarchy” and then click “save”. Do note that the subcategories will not “drop down” out of the parent category. They will likely be shown indented in a list below the parent category name. If you want the entire category widget as a dropdown, you can select that when editing the widget also.
Pages cannot have categories. Only posts can have categories. Pages are static and sit outside the blog structure and are used for things that seldom change.
