Help with blog posts

I have 2 questions…
1.) I’m currently using the Blissful blog theme. It has 2 template options for the pages. I currently have all my pages set to full width. I would like to set my blog page to the default so it will show all the archives on the side post. However, if I change the Blog page to the default template, it still doesn’t show the archives, categories, etc (yes, I’ve set them up under the widgets). I can get it to change on every. single. other page, but not the one I want. Am I missing some a setting somewhere or do they just not allow it in the one place I want it? For now, I’ve created a separate blog page named archives that shows them :-/
2.) In the Writings Settings, I wanted to change the default post format to gallery, but it doesn’t change my posts. Does this only apply to new items posted?

Blissful Blog offers a sidebar template on single page, archive, and search views, and three footer widget areas on any page. You can assign widgets to each of these areas by going to Appearance -> Widgets. -
