Help with Contact Form plugin

Hey guys,
I am working away at my site and have a small question. I recently installed the Contact Form plugin. That being, that people can now fill out the form and send me an e-mail. Is there any way that I can make it that the plugin sends from a certain e-mail? Here is the thing, whenever someone fills it out they are going to put in their name and a short subject. So it is going to appear in my e-mail as John Smith, subject Hello, or something along those lines. The problem is that a large portion of spam e-mails also follow this same format. So is there a way that I can alter it so that every form forwards from a certain e-mail or like every time i get an e-mail from the site it can have something in the name or subject that will easily help me distinguish it from others? I hope I made myself at least semi clear here.
