Help with Custom Theme Templates And Editing

I’m exploring moving from WordPress.org to WordPress.com but before I do there are some things I need and questions I’m trying to understand. One of them is better theme support. I’ve been designing a custom theme with the Create Block Theme plugin. But, as soon as I save templates to the plugin they get weird names like “
wp-custom-template-long-post” that I didn’t assign to them. They also become “locked” in so that I’m not longer able to delete them or rename them. I get this feature probably exists so “users” of a theme can’t delete stuff, but I’m the creator of the theme and need to have full access to quickly edit and adapt my theme as my WordPress skills and design system evolves.I’m just feeling really restricted, blocked, and confused and have no clue how to do what I’m trying to do without developer tools that I don’t enjoy using. 🙈 I’ve tried to go into the Theme File Editor JSON, but even in there it doesn’t let me change the names of templates or remove them. Even if it did work, that’s not a long term solution since I’m not a developer and I want to be able to edit and customize my theme visually on-the-fly whenever needed.
Am I asking too much? Am I being unreasonable? I’m a very collaborative person, but I try to explain things clearly with how I see them and what my expectations and interests are so people reading this have a solid baseline to operate under.
