  I can’t seem to access the full toggle down menu (which included font colors) in the new blocks editor. Help!

  Not all blocks have color options. What block are you trying to use? And can you tell us the post you’re working on? If it’s published already, please give the direct link, or if it’s still a draft, just the title.
