Hidden tags? (Hidden to Widget)

Is it possible to associate tags/categories with a post, yet not have particular ones show up in the Categories widget?
I want to have a very limited number of things in my Categories widget, yet there are times when I wish to add more tags to a particular post so the world can find it easier.
I run a blog about rum, and want to ensure that every rum gets listed in my Categories. I might do a post about a particular rum drink (Mai Tai) that also contains other ingredients (Pineapple Juice). I’d like to tag with the particular rum used and also tag with Mai Tai and Pineapple Juice. But I don’t want these last two to show up in my Categories Widget….
Or is there another way to Tag that this newbie doesn’t know about?
On a somewhat similar topic, is it possible to separate the tags into multiple category widgets? So that I could have a category widget with a title of “Rum” and another category widget with a title of “Ingredients” and another called “Drink Recipes” ??

You mean not have specific catgeories show up in your categories widget? Only method I know of is to put the category widget in place, copy out the HTML, edit it to remove the categories you don’t want in there, and then add the code into a Text widget. It’s a pain and you have to keep it updated if you add categories but it will work for you.

Yeah. Of course I want the automation AND the feature. That’s several steps that I’d have to do every time I posted. It would be easier to have a Text Widget just containing the categories that I wanted – at least that is a 1-step update every time I post.

You can do it actually with regular wordpress fairly easy. [ie edit a single line within the theme or widget] The issue is that you need file level access to do it and we can’t do that here at wp.com due to security concerns.
