I am curious if there is a way to hide the words “Category Archives: ________” at the top of a categories page. To see an example of what I am talking about visit http://footballandfrenchtoast.com/category/full-episode/

Certainly. Note that CSS is theme specific. The link you provided http://footballandfrenchtoast.com/category/full-episode/ is for a blog using the iTheme2 theme.
To hide the “Category Archives: ________” at the top of categories pages in the iTheme2 page, try this:
.category .page-title { display: none; }Note that you need to purchase the Custom Design upgrade at WordPress.com in order to make CSS changes like this, but you can preview any time from your Appearance → Custom Design → CSS page.

Yep, you can use the same CSS in the Nishita theme because it uses the same “category” and “page-title” class names for category page headings.
