Hide dashboard menu items from user groups with custom code

  Hello, we run a WordPress website development agency and once we finish websites we hand them over to our clients with a training session on how to do minor amends like changing text and imagery but the bigger stuff we manage. We have had issues in the past where clients end up adding plugins to their site which ends up breaking it. How can we hide the WordPress dashboard menu items from user groups but ensure our Admin role has access to everything? We don’t want to use a plugin to do this, so is there a custom code solution?
