In Sketch, you’d need custom CSS to hide the date.
Newer themes have a Content Options panel in the Customizer, where you can check a box to hide post dates. You might want to try Penscratch 2: https://penscratch2demo.wordpress.com/
I don’t see time stamps displayed on your site – can you point me to it so I can take a look?

Sorry, I did not formulate my question well. When I publish a new entry I would like the date on which it was published to appear hidden, that is, not to appear public, can it be hidden?

If you’re referring to the date that appears just below each post title, the answer I gave you just before still applies. So, two options: you can use custom CSS, or you can try another theme, like Penscratch 2.
Custom CSS is available with the Premium or Business plans.
If you’re referring to the date in the URL – for example, https://pinchechicachic.wordpress.com/2018/02/12/your-post-title – there isn’t a way to remove the year/month/day there.

Actually just to be super clear, it is possible to the remove date in the URL (like https://pinchechicachic.wordpress.com/2018/02/12/your-post-title) with a plugin, which you could install with the Business plan.
