Hiding some of the custom fields and corresponding values

I have installed a “Directory” theme, wherein admin can allow people to join as members, who may add their Links-and-Other-Info in the directory through a form on submit. Basically, the form inputs are nothing but a way to write “Post” on the directory. In other words, the theme turns “posts” into “listings”.The admin can add “custom fields” to the form, which is nothing but adding regular custom field to the page. Whatever value is fed by the member in this custom field, is published in his/her directory listing.
What I wish to know is, is there any way to HIDE the custom field and the value on publishing the post? When this is done, the admin can always see the value, but the public at large viewing the directory does not see anything in relation to this post.
In short, how do I prevent certain custom filed(s) and its(corresponding) value(s) from being published, even if they are present?
