  I am new to wordpress – apologies therefore for my stupidity – I cannot seem to find how to set the default home page (front page) title to HOME or how to include it on the pages menu. this is at the moment frustrating.

  If you create a custom men there is a custom Home link ready to use there.

  You don’t do it by adding a custom link, you click View All in the Pages module and add the already available Home item.
