Home page control?

Hi! I’m wondering if there is a way to control the posts on the home page? So perhaps only having the latest post show? And not the back log…?

You may control the number of posts visible on the front page of the site if the Theme permits it in Settings > Reading.
I also recommend you learn how to use the More Tag to manually set the excerpt length on each post. That will give you better control of your front page.
Some Themes allow customization of the front page of the site. You will have to check the Theme details for the one you are using.

Your site is set to have infinite scroll active.Infinite Scroll is a feature that loads the next set of posts automatically when visitors approach the bottom of the home page or posts page. It’s designed to help visitors read through many posts without effort.
When you get to the bottom of the page, you’ll see a loading icon display briefly as the next seven posts load below.
You can disable it like so:

Better to do a Lorelle suggests and set a reasonable number of posts per page, and use the more tag to make the posts more compact.
