How are my website stats and email subscribers managed?

I would like to self-host my wordpress.com blog, eatfoodseattle.com (the domain is currently registered through Dreamhost and I will be using Dreamhost for hosting as well). However, I am concerned that when I update the nameservers from wordpress.com to dreamhost.com I will lose my email subscribers and stats.
Can you please tell me: are my website stats and management of my email subscribers managed through the WordPress software, so that they will be fine when I move my WordPress installation to another host? Or are they managed by other software provided with this hosting service, so that I will have to set them up again?
If they are managed by other software, how can I migrate them over to my self-hosted blog?

When you move to a self-hosted WordPress.org blog, the support staff here at WordPress.com can help you move your subscribers and stats to your new blog. To do this, you will need to install the Jetpack plugin on your new blog. We have instructions for how to prepare your site with Jetpack here: Moving Your Subscribers
To make sure we can also move your stats, you will need to be sure to export the contents of your WordPress.com blog and import them into your new WordPress.org blog. We have instructions for this under Moving to WordPress.org on this page: http://en.support.wordpress.com/moving-a-blog/#moving-to-wordpress-org
Once your new blog is set up and Jetpack is installed, you can reply here or post a new support request and we can move your subscribers and stats for you. Please let me know if you have any questions about that!

Hi Rachel,
Thank you so much for your help. I used the importer to import almost everything but there were some things it didn’t get and I’d love you to move over my subscribers and stats.
There was a bunch of stuff that didn’t import: widgets, sharing on posts, theme, header image. Is this normal or did the importer not work correctly? Before I go in and try to fix everything, are you guys able to make that update?

I moved your subscribers and stats to eatfoodseattle.com, as requested. You should be all set with those!
Your blog export file includes all of your blog’s posts, pages, comments, categories, and tags, but other things like your widgets, sharing, and theme will not transfer. If you have any questions about how to set up your self-hosted site, you can get more help with that on the WordPress.org support site here:

Thank you, Rachel! My stats all look great and I appreciate your info on the blog export file. However, I (still) have 220 email followers on my WP.com blog and now, on my self-hosted one, it says only 17! I have screenshots that I can share with you if that would help. I am looking at eatfoodseattle.wordpress.com vs. eatfoodseattle.com in the right side bar where it says “Subscribe to Blog Via Email.”

The followers that are showing on your WordPress.com blog are your social media (Facebook and Twitter) followers. They appear because you connected your WordPress.com blog to those accounts via Publicize.
If you’d like, you can disconnect those accounts from your WordPress.com blog by going to Settings > Sharing in your dashboard. You can click the “x” next to the accounts you want to disconnect.
You can also set up Publicize on your new self-hosted site. You can find instructions for setting it up on this page: http://jetpack.me/support/publicize/
