Hi there, As the account that you’re posting from is only a few hours old, you likely won’t see that option in the Block Editor to switch to the Classic Editor.
Keep in mind that WordPress.com is changing over to the Block Editor as default in the near future.
https://wordpress.com/support/replacing-the-older-wordpress-com-editor-with-the-wordpress-block-editor/Until that happens, you can continue writing in the Classic Block which emulates the Classic Editor.
https://wordpress.com/support/wordpress-editor/blocks/classic-block/
https://wordpress.com/support/wordpress-editor/Once the platform is changed to the Block Editor, you’ll be able to continue writing in the Classic Block or to go to your site’s WP Admin and choose to write in the WP Admin Classic Editor.
https://wordpress.com/support/editors/#classic-editorRegarding your second question about steroline.wordpress.com, the account username is taken https://wordpress.com/forums/users/steroline/ so the related wordpress.com site is reserved for that account and is unavailable for anyone else to register.
Post back here if you have any other questions about the above topics.
