How can I make the spacing on my page look like it does in the preview?

The widgets you see right now are the Default widgets. Once you add your own, they’ll disappear, or just add a blank text widget for a blank widget area.
I’m not entirely sure what you mean by your other concerns.

Hey thanks! Sorry for my rambling–I didn’t realize this was going to go live! For now, getting rid of the widgets is my main goal.
I tried adding a couple random widgets from the “available widgets” pool, and they successfully replaced the “default” Meta and Archive and Search box ones I’m trying to get rid of. However, when I deleted the random filler widgets, Met and Archive and Search came back.
Help?
I’d also love to get rid of the “Blog at WordPress.com/Theme by Vostek” and “About/Gallery/Blog” at the bottom of the page if possible… happy to pay for CSS upgrade if need be.

If you want a blank widget area, try adding a blank Text widget.
The WordPress.com and theme credit needs to remain as part of our terms of service.
As for the footer navigation, at Appearance -> Menus in your blog’s Dashboard, select nothing for your Footer Navigation.

As for the menu, it still shows up even though I have nothing for my Footer navigation. Not a huge problem, but it does bother me a bit…

Having your site’s menu appear in the footer is a default setting for Vostok. If you take a look at the Vostok demo page, you can see the same thing:
