How can I post with the old style?

Beep beep boop!?!? I HATE the “new” style I have to follow when posting. I don’t see where it captures my old, “frequently used” tags, there are so many features I was used to using with the old posting user interface … did you just get rid of all of them? Why?
I also can’t seem to “pre-date” my postings (for example, maybe I wrote something yesterday at noon, but I’m just now posting it… I want to be able to put yesterday’s date and time on it…) and I can’t.
Is there any way I can make the “old” UI as my standard?The blog I need help with is: (visible only to logged in users)

The classic editor still exists, you can still use it, and staff has indicated that there aren’t any plans to scrap it. However, there is no way inside WordPress.com to set it as your default anymore.
The simplest option now is to bookmark your WP-Admin dashboard and always create and edit new posts and pages via that. To find your WP-Admin dashboard, click on the WP-Admin link on the My Sites page, or add “wp-admin/” at the end of your WordPress.com URLs. (http://cyranowriter.wordpress.com/wp-admin/)
To create new posts, go to WP-Admin ->Posts ->Add New. To edit existing posts, go to WP-Admin ->Posts ->All Posts ->Edit. Same for pages.
If you don’t mind “getting your hands dirty” a bit, another user has created workarounds in the form of a user script or a bookmarklet you can install in your browser that will automatically take you to the classic editor every time the new one tries to load, like when you click the New Post or Edit buttons in the admin bar or on-site.
