How category pages work?

My site currently consists of Posts and Pages. The pages are organized in a custom menu under the headings: Studies; Principles and Scripture Insights. The “Studies” are grouped by a particular subject. However, I believe I may have not set this up correctly for what I want to accomplish. I say this because, the Posts also are part of the discussion for the various topics. As a result, articles pertaining to a subject are in two places, Posts and Pages, either under the menu heading Viewpoints or Studies.
I would like to have all articles for a topic listed in one place, by subject. It seems as though I should have published everything as a Post and then grouped them in a custom menu using Category Pages. However, I’m not sure that is correct. Also, I don’t know if the site could be revised to accomplish that now.
Further, if all of the Pages are converted to Posts, will they retain their publish date, or will that date change? The sequence of the articles is important, because each article is part of a study of a subject, and they are therefore sequential.
I will soon be starting a lengthy subject, and I would like to publish only posts, but would like to group the articles by the subject, i.e. category.
This is a long question, and I hope I explained it clearly. Thank you very much for your assistance.

It sounds like what you really want are posts, but there’s no way to turn pages into posts directly. You’ll have to use the old-fashioned copy and paste routine.
In this case, categorize your posts as desired, and your category archive pages will be linked to under each post.
