Hi there!
It’s possible to add copyright information to your footer using some custom CSS.
If you’re not familiar with CSS, it’s a coding language that’s used across the web to change the appearance of websites. Here at WordPress.com, it’s possible to add custom CSS to override certain design elements of themes.
To add custom CSS, firstly navigate to My Site in the top left of WordPress.com then choose the option to Customize in the left sidebar. You’ll reach what’s known as the WordPress.com Customizer:

From here, click on the CSS tab. Below the introductory text in the resulting editor, copy and paste the following CSS:
#footer-nav-wrapper .site-info:before { content: "Copyright information | "; }Replace Copyright information with the copyright text you wish to be displayed. :)
