Each of those can be set up as Child Pages to your Portfolio’s Parent Page.
If you intend to post those photos in your blog posts, you can use a Custom Menu with Categories to create special pages that showcase those categories.
All explained here: http://en.support.wordpress.com/pages/
And since it seems you are very new to WordPress.com (Welcome!) you might want to read http://learn.wordpress.com

Go to Appearance – Menus, select the pages or categories you want to add to the menu and click add. Then drag the new menu options to the place you want them. Drag an option slight rightwards to make a sub menu.
Read more about menus. You may need to create a custom menu first.
I would say though that the theme you’ve chosen doesn’t make it clear to a visitor that there ARE sub menus when you have them. Visitors have to hover over the menu option to find lower options – there’s no typography pointing the way to make it obvious there’s more to see.
I do like the front page images – very classy.

@nprior- There are few themes available for WordPress.com (if, in fact, any) that indicate there are Child/sub Pages present until you hover over the menu.
-
@justjennifer – thanks for that. One theme I use on both wp.com and wp.org (Morning After) has sub menu markers on .org but none on .com. Go figure!

Would like to thank you all for your help, and yes it is possible to create these subfolders but no its not clear how.
Hopefully I can do this.

This is not about sub-folders. You creat sub-pages the same way you create pages. http://en.support.wordpress.com/pages/ Then you add the Pages and sub-pages to your custom menu and drag and drop them under the parent pages to create subpages.

It’s not confusing if you take the time to read first. Start here > http://en.support.wordpress.com/menus/
Also note that you stated this above:
So i can put images in each folder within portfolio
justjennifer gave you the answer above:
Each of those can be set up as Child Pages to your Portfolio’s Parent Page.
You will be entering your images onto page and subpages. An image gallery will display a set of thumbnail images attached to a particular post or page or sub-page. When clicked, gallery images are displayed in a full-size carousel view.

Thanks for all this I’m now just trying to rearrange the sub pages into a particular order now? I have googled but no luck and also wanting to change the main menu order too.
Any help is much appreciated

This is a drag and drop situation just like the illustration shows here http://en.support.wordpress.com/menus/#changing-the-order-of-menu-items-and-creating-sub-menus
Create a page called A (parent page)
Create a Page called B (child page or sub-page)Create a custom menu http://en.support.wordpress.com/menus/
Add the two Pages to it http://en.support.wordpress.com/menus/#adding-pages-to-your-menu
Drag and drop Page B under Page A indenting it.illustrated walk through here > http://onecoolsitebloggingtips.com/2011/08/11/wordpress-com-custom-menu-walk-through/

Also note that images can’t display on any Pages until you optimize and presize them offline and then uplaod them Pages. http://en.support.wordpress.com/images/

Thanks so much! I’m currently updating my pictures and there are two of the same photos on my site how do I delete these under Fashion? Do i have to know what html to delete?
Also when I upload all my images into fashion can i have headers for each new model to separate my work?
I’m not very good on here so this means a lot!!!
Thanks
Sarah

1. Delete one of the duplicate photos from the Media Library
2. If by “header” you mean an image header, you need to pick one photo as the Featured Image on your Page. http://en.support.wordpress.com/featured-images/
3.And since it seems you are very new to WordPress.com (Welcome!) you might want to read http://learn.wordpress.com
I really recommend spending some time with that tutorial, as well as becoming familiar with the WordPress.com support site, which is linked at the top of every Forum page.
Cheers and good luck!
