How do I archive an old post and only have one post at a time on the home page

I wish to maintain my post permanently in the categories set up and only have one post per week shown. According to the web site it seems that I can delete a post but it will permanently be deleted after 30 days. I do not wish them to be permanently deleted but have all post remain but only one post per week showing on the home page.
The blog I need help with is: (visible only to logged in users)

The easiest way to limit your home page to the latest post would be to change the setting here under “Blog pages show at most” to 1:

Ok Jeremy, I went to the home page and I do not see anything that shows “blog Pages”.. I see the following on pages:
All —-Published —-TrashBulk Action —- Apply —— All Dates —- Filter.
Below these heading are headings are these headings :
Title —Author—Stats— DateI see nothing that is allowing me to change blog pages from all to 1.
Can you or anyone help me get there? -
