How do I change categories from one post to another?

  For my first post I used the categories of travel and Mexico. On a subsequent post I added new categories and checked them in the edit function. When I preview the new post the old categories show in the sidebar. How do I change this to the new categories?

  Could you please let me know on which post you are referring to? Please note that if the category ‘Mexico’ still contains posts, then it will be shown in the sidebar.
