How do I change default image when sharing to Facebook?

When I post my website URL to Facebook it shows one of the default images with some dummy text as the preview. I have tracked the text and image to the defualt ‘home’ page (which I have deleted) but it still shows that. Even when I change the header image on the old home page it won’t override.
I have made my actual default page my portfolio page and would like to set my default photo for the site to something custom.

Facebook caches things, and at times it seems there is no rhyme or reason as to what they pull off of a post or page.
You can use the Facebook Developer Debugger to clear things: https://developers.facebook.com/tools/debug/ .
Add the URL of the page you wish to check and click Debug. In the When and how we last scraped the URL section at the top you will find a “scrape again” button. Click that and FB will go out and re-scrape that page. It can sometimes take a few minutes to even an hour for the new information to show up depending on how busy their servers are.
