how do I change/get rid of "categories"?

I have tried to “Add” a category, but nothing happens – EVERY post of mine has the same two categories – “uncategorized” and “quilting” – since I cannot change or add anything new, I want to get RID OF THEM! how do I do it? (I wrote this message a week ago, asking this same question, but never got a response!) I chose “Private” before, so maybe someone out there can help me if I post this as “Public” this time!

You can manage the categories on your blog in the Dashboard at Posts > Categories. We also have more details about how to remove or add them to specific posts in our support docs.

I’ve TRIED that – but all three of my posts STILL say that they are “uncategorized” – I’ve tried to “Edit” that category, then SAVE it, but it just returns to the same page, and there is NO “new” name added, and it still says “Uncatorized”!!! I am about ready to just ditch this site – nothing I can do, changes ANYTHING!!!!!
I’ve rebooted, cleaned out my cache, but NOTHING changes!!!

after “saving” the change, (that I tried to make), I get this message at the bottom :
Deleting a category does not delete the posts in that category. Instead, posts that were only assigned to the deleted category are set to the category Uncategorized.
I cannot “delete” that category, I can only “edit” it – supposedly change the name, and then “update” it – but NOTHING happens – and all three of my posts are STILL listed as “uncategorized” – – I want to get rid of it completely – otherwise, at least find SOME WAY to change it to a different category!
PLEASE – – what can I do???

The default category is “Uncategorized”, and can’t be deleted.
If you’d like to change which category is added to your posts by default, you can do so at Settings -> Writing in your dashboard.
