How do I 'do' categories and what's their purpose?

Sorry to be completely dim but after reading lots of stuff about categories, I still can’t work out what they are, what they’re for, how I attach them to my fledgling blog and how that means I get more visitors!! I have the same question regarding tags but thought I’d just stick with one question at a time!!

You can read all about categories in our documentation.
The basic gist is that categories are used to filter or group related posts together. For example, all your posts about dogs can be the in ‘dog’ category, and all your posts about cats can be in the ‘cats’ category.
You can add categories two different ways – the instructions for the first way (via the categories module) are here, and the instructions for the second way (via the dashboard) are here.
Tags are fairly similar to categories, but are normally used to describe a post in more detail. Using the dog example, you could have two separate posts in the dog category, but have one tagged with ‘chihuahua’, and the other tagged with ‘labrador’.

I will have a look at all the links you suggested and become a categories ninja and a tags super hero!! I think somewhere deep inside I probably knew what it was all about but was just being a baby!
