How do I get my images to pop up into the carousel option.

I would like to have a gallery category with subcategories like “portraits” or “couples” and then have galleries in those subcategories that feature those images. Does that make sense?

It does make sense :)
In this case, since you want images to appear rather than blog posts, you will be best served making Pages rather than Categories.
You can create Portraits and Couples pages and insert Media Galleries into them.

http://en.support.wordpress.com/images/gallery/I know you had some trouble the first time around creating your Gallery pages, but this time, if you get stuck along the way, please let me know how/where/when you hit a road block and I can help you through.
Once you’re happy with your Galleries, you can adjust your menu accordingly. Return to Appearance → Menus, you can add these Pages under the heading Galleries.

That helps a lot. I might have a couple more questions after this, but is there a way to make posts to look like my page that’s called “Couples?” I love that the page is full width and the carousel works as well as I can add text to the page. However, I also like that I can categorize all of my different couple shoots in one spot and that I can have all of the posts to be viewed in a thumbnail version like they are when I click my “class assignments tab.”
From what I’m reading, this doesn’t seem to be an option, but just in case.

You are correct. You’d have to choose one layout or the other, since one is a photos page and one is a posts page.
If you want the best of both worlds, you could always take images from blog posts and create a gallery page from them. The photos would appear on your dynamic post, but would also be more “permanent” in your gallery.

Thanks for being so helpful! I contacted the theme author and she gave me a little code to make the blog posts not quite as wide as the pages, but much better.
