How do I get pages in side menu to disapper and new ones to show up?

I am trying to remove some pages, contact us and portfolio, that I started to set up, but they don’t show up on the pages dashboard or anywhere I can find.
And one, Contact Us, that I did set up and says is published does not show up.
The blog I need help with is: (visible only to logged in users)

You have somehow managed to create menu tabs for pages that doesn’t exist. The About-tab, for example, links to http://thewileyteam.wordpress.com/#about, but this isn’t a page URL used on WordPress.com.
To create pages you have to go to Pages ->Create New in the dashboard, insert the content you want, and then publish the page. Only after doing that can you go to Appearance ->Menus and add those pages to the custom menu. I suggest you completely delete the menu you set up and start over, after creating the pages you want. Thanks for the links. I was able to follow the custom menus link to try something a bit off tangent since it only permits the static top menu or -select-.
When I chose -select- the #links disappeared and the missing pages appeared. The Home page disappeared though, and all the posts with it…
I found the #about and the others in the custom menu page and deleted them. I am still perplexed why only two of my four pages show up on the left menu when the static top menu is on and they all show up but my posts and home page disappear when turned off. I have no control over the order pages appear, it seems.
I also noticed that it has pre-filled the Contact Us page form with my data and not left blank for others to fill out. I removed a couple of fields until this is resolved.

If this is about the autofilled information in a contact form or a comment box note that your information is visible to you when you are logged in and have not cleared your browser cache and cookies. No one else can see it.
Log out, clear your browser cache and cookies and without logging in visit your blog to see that your details will not be there.

There are two approaches.

Check the sub-pages themselves to see if you have established a Parent page and child page “hierarchical structure” in the page attributes module. Remove if required.Also remove any “order” numbers you have assigned that may conflict with the order you are creating by dropping and dragging. Or simply change them so they are the same order as you establish in the menu. Establish consistency – problem solved.

I now have control of the page order and the fields did go blank, as you said, when I cleared the cookies. That was a bit unnerving thing to see since I don’t use auto-fill on my computer.
You have certainly shortened my learning curve.

Keep in mind if you view the form while logged in your details will once again appear there, but only you will see it. Visitors will see their own details.

I did go through that cycle again once I re-added the email field, just to be familiar with it. You have both been really quick with the answers. It has made a long night fruitful!
