Or is it a case of changing theme & seeing if you can do that with each theme?

You can change font sizes on a post by post (or page by page) basis by switching to the text (HTML) editor and manually setting the size, here’s a good explanation of formatting HTML that you might find useful. This can be done regardless of the theme you use.
Alternatively you can use CSS with the annual custom design upgrade (available separately as well as part of the premium plan) to set the font size once and not have to worry about it again. To test it out go to Appearance > Customize > CSS and paste the following into the text box, it will increase your post and page main content font size. The CSS you need may differ depending on the theme you use.
.entry-content { font-size:1.1em; }Finally, you can also preview other themes in the theme showcase to see which come with a larger default font as standard. To my knowledge there aren’t any themes that give you the option of changing the font size from the default without resorting to one of the methods above.
