how do I limit the number of posts on my pages

While I want to have the latest post featured on my front page (i.e. only 1 full length post on the front page), for the posts in different categories, i have created a custom menu which has three different pages. I would like to change the number of posts displayed on these category pages. At the moment it shows only one full length post, i’d like it to fearrue at least five posts.
The blog I need help with is: (visible only to logged in users)
