how do I organize posts so I can arrange them in a menu?

I thought I could organize posts into a custom menu by using tags, but that odoesn’t work. Can I redo my posts so I can organize them?
The blog I need help with is: (visible only to logged in users)

Could you clarify exactly what you’re looking to do? I believe you’re trying to organize your posts by topic. Then, a link to the topic will be in the menu bar at the top of your site so that when visitors click that menu item, they will be taken to that selection of posts.
If so, that can be accomplished using the category pages as mentioned here:

If not, could you please elaborate a bit?
