If you do wish to assign them to posts but not have them display on the post then you can do this free to charge if you use the iNove or Monochrome themes. Otherwise you must purchase an annually renewable custom design upgrade and do the required CSS editing to suppress display:

That’s not an answer. Especially for a group blog.
To give an analogy: I can disable comments. Deleting them all one by one would be really silly.
I’m looking for a method of removing the option to add tags.

Let’s be clear about this. As I said above only two themes iNove and Monochrome provide the option of suppressing Tag and Categories display.
If you want to remove all existing Categories and/or Tags then use bulk delete. bulk delete posts > http://en.support.wordpress.com/posts/edit-posts-screen/#bulk-edit

Oops! I typed bulk delete when I mean to type bulk edit.
Bulk Edit
Using the Bulk Actions drop-down menu at the top of the Edit Posts list, you can bulk edit several posts at a time. To do that, select several posts from the list using the checkboxes on the left. Then select Edit from the Bulk Actions drop-down menu and click the Apply button. You will see options that can be applied to all of the selected posts. -
Thanks for the second reply.
CSS editing is what I need to look at.Sorry about the overlap. We were typing at the same time. Best wishes with your blog.
