How to activate Lodestar portfolio and testimonial templates

For the Lodestar theme, I am having trouble activating the Portfolio and Testimonial templates exactly as its seen on the theme. Every time I try, it ends up looking like a normal page. The lodestar theme guide doesn’t provide step by step instructions on how to do this. please help!

Here is a couple bits of information found from the theme setup docs at:

Make sure you have a portfolio set up. You can do so by following instructions here:
https://en.support.wordpress.com/portfolios/
Once you’ve done that you can go ahead and create a page that will display your portfolio.
To do this you have to go to Page –> Create New (or Edit if you already have it set up) –> Page Attributes (right side of screen) –> Page Template –> Portfolio Template.Similar instructions apply to the testimonials also.
You can also apply Lodestar’s Testimonial Template to display your testimonials on any page of the site.
If you apply the testimonial template to one of your pages, and then assign that page as a panel on the front page in the Customizer, it will display two randomly picked testimonials on the front page:
