Thanks!

Hi there. Advertising is not allowed on WordPress.com. Adding any advertising whatsoever, whether Google Adsense or ads you solicit and place yourself, will get your site suspended: http://en.support.wordpress.com/advertising/
The only exception is WordPress.com’s own WordAds program. See here how that works and how to apply: http://wordads.co/faq/

I don’t quite understand this. There are a whole load of YouTube videos about linking Adsense to WordPress and even WordPress itself has pages on it. Is this a new directive?

This is not new, no. Rather, there are two versions of WordPress. Your site is on WordPress.com where advertising is not allowed. Consider it the price of free web hosting and free technical support. You agreed to this when you accepted the Terms of Service when creating your account.
The tutorials you mention all apply to WordPress.ORG websites. WordPress.org is an open-source software that anyone can install to their own domain on their own web hosting. The open-source software is not bound by the WordPress.com terms of service, and you can pretty much do what you want with it. Your web host will have their own terms of service, but generally those boil down to don’t use the site to do anything illegal and don’t use it to send out spam.
You can read more about the two different versions of WordPress here: https://en.support.wordpress.com/com-vs-org/

You won’t find a single support document on WordPress.com that gives instructions how to link to AdSense. If you look at the URL you’ll see it says WordPress.org.
Additionally, people with their sites on WordPress.com might be posting tutorials, but that does not mean it is endorsed by WordPress.com the platform. I hope that clears up any confusion.

Anyone know how to convert from wordpress.com to wordpress.org then? I paid for premium and I assumed that WAS wordpress.org

You’ll need to set up a hosing account for your custom domain domain with the web host of your choice and then install the WordPress.ORG software, as well as either a free or premium WordPress.org theme, to that domain. The WordPress.org support site lists several hosting providers that specifically supports the WordPress.org software.

https://wordpress.org/themes/Once you’ve set up your self-hosted site, you can transfer your content over there with the export/import functions under Tools in the WP-Admin dashboard. You can transfer your followers, and gain access to a number of WordPress.com features via the Jetpack plugin.

http://jetpack.me/You’ll probably need other plugins besides Jetpack to get certain features available in WordPress.com, but with the right plugins you can get all the functionality you have on WordPress.com, and then some. You’ll need to visit the WordPress.org support forums for help with that, as well as any other issues regarding self-hosted sites.

https://wordpress.org/support/Note that you can also buy the Guided Transfer upgrade. With that once-off upgrade a staff member will help you with this entire process if you don’t feel up to doing it all yourself. http://support.wordpress.com/guided-transfer/
To automatically redirect visitors from your old WordPress.com site to the new self-hosted one, you’ll need the Site Redirect upgrade. You don’t necessarily need this, but if your blog has been around for a while it’s a good idea. You buy this upgrade for the free WordPress.com site, so don’t delete that site after transferring your content if you want the Site Redirect: http://support.wordpress.com/site-redirect/
Lastly, you can cancel your Premium Plan from the My Upgrades page, should you wish to do that. Note that you will only get a refund if it has been fewer than 30 days since you bought that upgrade. https://en.support.wordpress.com/refunds/
