How to change or create new categories on free account?

1. I have set up one of your free accounts but I see that all my blog posts are listed as “uncategorized” and I cannot seem to change that or add new categories. Is this not supported on free sites?
2. I have chosen a theme, but I do not see any structure in my blog just a reverse temporal list of posted (blog) articles followed by a list (or with the list on the left) of other posts, archives, comments, etc. What I’m trying for is a page that lists all my blog posts (for any reader) somewhere along or near the top of the entry page? This also relates to question (1) above as I would like to see a list of different categories at the top and have each one of those link to a list of posts in that category.
is any of this possible given a free subscription or must I upgrade?

1. For assigning categories to your posts and assigning a default category of your own choice see:

2. The structure has nothing to do with purchasing an upgrade.

(c) If you do not wish to use a theme that has the custom menu hidden behind a link you can switch themes at any time and no content will be lost. See:

https://en.support.wordpress.com/customizer/To explore and browse themes you can use the feature filter found at https://theme.wordpress.com/themes/ however there is no filter we can use to locate only themes that do not have menus hidden behind links. They tend to be the new themes though.

Sorry my last sentence above was not clear. What I meant to say is that some of the newer themes are the ones that have menus hidden behind links.
