how do i change uncategorized to a category
To give Uncategorized a different name just head over to your dashboard under Posts > Categories:
https://archerwestgrouprei.wordpress.com/wp-admin/edit-tags.php?taxonomy=category
Hold your mouse over Uncategorized until you see the word Edit appear, and click on it, as you can see here:

Now you can edit the category name as you like.
can a site or blog be under more than one category
A blog post can definitely be in more than one category.
