Hey Kurtsfulbright!
To bring your site’s theme, design, and plugins to the exported site, grab the All-in-One WP Migration plugin. If you’re sticking with the XML file, no worries, it’ll work fine too, but without your fancy customizations. Oh, and don’t forget to keep your original site public for a bit after importing the XML file, so those awesome images can find their new home. For all the nitty-gritty details, check out this handy article on exporting your website.
Cheers!

@kurtsfulbright, since the site you referenced is on the Personal Plan, you cannot install that plugin @tonynewness mentioned.
The export file is a specialized file that is designed to be imported back into another WordPress site. It is not a text copy of the actual pages and posts.
About the only way to save the content of pages and posts to text files is to visit the actual pages and posts on the site and copy the text out and then paste it into a file on your computer.
