How to show only resume of my posts

I want to post a very long post and i don’t want it to be shown entirely. I don’t manege to only show resumes of my posts although I already changed the reading settings already. I know my posts are partial in the reader feed, but I want them the same way on my actual blog. How can I do that?

It would also be very helpful to have a menu for all posts, I think. Like the category on top and the posts which fall under it below, if it makes any sense. -
