Those are category pages, not blog pages. They are coming up that way because some themes do that on category and archive pages.
To make a Read More option, use the icon in the Write Post page that looks like a dotted line cutting a piece of paper; I believe it’s number 13. Put the cursor where you want the break to be, hit Enter, then hit the icon.
