Hi
Because I have so many pages Im trying to lessen them. I was told to use posts instead of pages. For some of the pages on my site I have alot of content. Some of the content is old like from 2017. But if I wanted to transfer them over as posts will the year really matter because I would be publishing old content as new posts

It is good that you are organizing your site in a better way.
For the articles that you write, posts are a better way and they will also show on your blog page. Also, make sure to organize your posts using categories. https://en.support.wordpress.com/posts/categories/Difference between posts and pages

If you will move your content to posts and publish them, publish date will be the current date.
You also have the option to backdate your posts to 2017 if you feel that is relevant.When you are editing/writing a post, look for the Statusmodule on the right sidebar. Go to Published and change the date to backdate. Then publish your content.

You can search for themes that support left or right sidebars: https://wordpress.com/themes/filter/right-sidebar
Widgets can be added to the sidebar by going to Customize > Widgets. There’s a great WordPress learning guide on how to do that here: https://learn.wordpress.com/get-flashy/

I uploaded screenshot of my current theme in my media library. For that theme the sidebar widgets doesn’t show. Why are only some themes like that
But when I go to customize widgets the widgets are all there but there not showing

With your current theme the widgets are hidden behind the gear icon at the top, so they are only visible when you click that icon. This is explained in your theme’s documentation here:

Go to the Customizer, add the widgets and publish. Then view your site, and click on the icon to open the widget area.

But why are some themes like that though
When a theme developer creates a theme they get to choose where to put the widgets (top, sidebar, footer) and/or behind a gear. In your case the theme author decided to hide them behind the gear.
