I don’t see “visibility” or “privacy” anywhere in WordPress.

I am interested in making a post or all posts private.
private means that non-members cannot read the post.
a use case is a diary. Only the logged in user should be able to read the posts.
I would like the ability to do this per post, or set it once to make the entire site private. Either one is fine with me.
The official docs mention visibility features that i don’t see anywhere.
I’ve looked in settings general, settings privacy, add new page, page templates, and create new post.

Settings/General is where you make your whole site Private. You do need to be in “default view” rather than “classic view” (toggle top right). And note that you do need to be working on a site hosted here at WordPress.com.
