  I want to be able to ‘Edit’ my posts from the old version/classical WP format every time.
  Can I do this please?
  If so, How?

  Add /wp-admin/edit.php to your address (and save in your browser) and make sure you edit posts via the old /wp-admin dashboard rather than the front of your site.
