What is the best approach for setting up my website. Should I transfer to WordPress or leave it with google who I registered with as part of my business account but point it at workpress? I didn’t register it that long ago. Also, how does payment work if I transfer it?

You can either transfer your domain to us to use it on WordPress.com, or point the domain to your WordPress.com site, in order for it to work here. The choice is really up to you, though domains cannot be transferred anywhere within 60 days of registration.
The advantage of transferring it to us, is that payment and billing details for your domain name and site will all be in the one place. When transferring a domain anywhere, it has to renew for an additional year. No time is lost, this is added to the current expiry date, but it is part of the process. This will all be managed in your WordPress.com account.

If you want to use the domain on WordPress.com, the quickest way is to point the domain to us first, and get it working that way, even if you intend to transfer it too (possibly once 60 days is up). That way it should continue to point to us while the transfer takes a little time to complete, and you’re not waiting for the domain to transfer before it starts working on your new WordPress.com site.
