If I cancel my account can I still use my name at a later date and time?

I feel wordpress is a lot more difficult to navigate than I was aware of and not what I thought I would need at this time in starting my business. However once I have more l would like to use wordpress later. Is this possible to use my same name later on?

You can’t cancel an account. You CAN delete a blog, but if you do it, then neither you nor anyone else can ever use that URL ever again. So why don’t you just go to Settings->Reading and set it to Private instead? Then when you want it back, you just set it to Public.

I can’t even figure out how to set the blog itself up. It seems to have it look the way the demo did I would have to pay to upgrade or something and I wasn’t aware of that. It’s just difficult to navigate around.

No, it’s not. You just picked one of the configurable themes. I’ve been here seven years and picked one of those and was stymied too. Pick a simpler theme and you’ll be FINE.
I have no idea why they make the demos look the way they do and then fail to tell you how to make your blog look like that, but they do. It’s ridiculous.

What I need to know is this. How do I set my blog up in such a way where I can have my photo portfolio separated by galleries and then sections within that? For example have The title Portfolio and then within that have Street Photography, Black and White Photography, etc and within those be able to have different dates/events they were taken. Does that make sense? Also how do I know which themes are easier to navigate around?

Galleries are built into all themes here
You can sort Posts using Categories with either a Widget or Custom Menu
There are 3 or 4 (not sure of the number) themes that are designed for photo usage – try the photography filter – sorry can’t remember the names.

Your site is now set to Private, so I can’t see what theme you are/were trying to use.
Generally, one of the biggest stumbling blocks for people just starting out is that they don’t have enough content yet before their site can be set up to look like some of the demo sites. It can take a good 7-10 published posts.

As auxclass said, every theme can have a portfolio/gallery and such depending on how you set up your site. His suggestion about using a Custom Menu are spot on, but there are lots of themes that can be used for photography even if they aren’t designated as such.
I’d suggest browsing the Photography tag and see what others are using and how they’ve set up their site.

The name of the theme will appear there and clicking on it will take you to the theme’s Showcase page where you can read about the theme’s features.
