Hi there, you’re safe to go ahead and upload images that are 2000px wide. The system should take care of any resizing and cropping that needs to be done, depending what blocks you’re using and what not.
If you need more help, could you link us to a page in question?

The images with Me and text resize to crop top and bottom.
The images without me, they are different than 2000 *1200
And hold their dimensions on the page perfectly on iPhone -
One thing to be aware of is that the default behavior of this theme is to use a “parallax effect” on image sections on the homepage. When viewed on a desktop computer, the background images reveal themselves as you scroll, and because of this there will always be some cropping.
On mobile, the theme switches to standard images (that do not reveal themselves as the scroll) so the full crop is shown on mobile.
I recorded a video so you can see how the images use parallax scrolling on desktops, but fixed (non-scrolling) images on mobile. You can view it at this link: https://d.pr/v/HEv98Q
There is not a way to deactivate the default behavior of this theme, but you do have the option to switch to one of our newer “block compatible” themes, which allow you to create a custom homepage layout using a variety of text/image blocks.
For example the Maywood theme has similar image sections as you see on the Twenty Seventeen theme, but the images do not have parallax effect if you click on the “Open Live Demo” link and scroll down the page: https://wordpress.com/theme/maywood
Hope that helps! If there is anything else you need let us know
