1. My categories are listed as “category archives” in the posts posted in specific categories.
2. I cannot post a picture with text when I choose a category to post in. The picture only shows on my home page or if I click on the date under the text from the post in the category.The blog I need help with is: (visible only to logged in users)

You don’t post images into categories: you post images into blog posts, which are then categorized.

Yes, I think I just worded my question wrong (newby here!). I did try to post the image into the blog post in the correct category. I think perhaps I need a different theme.

Among the most common misconceptions is that bloggers fail to understand is
(1) there is only one page we can post to in any blog and
(2) the static pages http://en.support.wordpress.com/pages/ they create do not automatically update.Only the dynamic pages like Categories, Tags and Archives created by the software when we publish a post we that we have assigned Categories and Tags too will update automatically update with new posts.
By default the front page of the blog is the post that displays all posts in your blog. Though there is only one dynamic page in a blog for posts (not pages) http://en.support.wordpress.com/post-vs-page/ and we cannot post to more than that one page, we can create the appearance that we have posted to more than one page.
We organize posts by assigning categories to them. You can create a custom menu and add the dynamic categories pages into the custom menu.

Whether or not full posts, permalinked post titles or thumbnails are displayed on Categories Pages and Archives pages is theme dependent ie. it’s coded into the template and we cannot edit templates or themes. http://en.support.wordpress.com/themes/editing-themes/
In the majority of themes, posts on category or other archive pages show up just as they do on the main posts page in the blog and the number displayed is also the same. (See this page > Settings > Reading and note how many posts you choose there sets it for all). But in some themes only the beginnings of posts are shown, and in a few themes you only get titles or thumbnails. If the theme has an active excerpt box below the post editor, you can control the length of the excerpt displayed and insert a thumbnail image.
You compose your whole post first and before you publish it you switch to the HTML (Text) editor, copy the code you want in the excerpt, paste it into the Excerpt box, and publish the post. http://en.support.wordpress.com/splitting-content/excerpts/#creating-excerpts
This will have to be done on every post. -
Short answer: on category pages, the theme you’re using displays only the title and the beginning of the text of each post. If you want full posts on category pages, select a different theme.

Can anyone suggest a favorite theme they use/have seen that supports images and text in a post to a specific category? -
