How can I change the menu from vertical to horizontal?

Header image: Go to appearance > header and you will see there a recommended size for the header image. Create a header image that size, and upload it there.

On the menu, this is a serious bit of work to do. I’ve done it once before, but never got the submenu items to come off the bottom of the top level menu items, they kept coming off of the side of them rendering the submenus useless.

yes but if I wanted the ‘header covering all the top? The recommended size is just a square.

A full header, depending on the nature of the image, could make the menu and widgets unreadable. That is why the header image was designed as just a square.

Make an image 960px wide and 210px tall (unless you want to change the height), upload it to the media library and then replace URL OF IMAGE between the double quote marks in the background declaration below.
```
#header {
background: url("URL OF IMAGE") no-repeat scroll 0 0 transparent;
height: 210px;
}
```
If you want to use a taller header, edit the “height” value above and put in the height of your header image.

I would recommend removing the widgets from the header area if you change the menu and header to be full width.
