Just to clarify what you mean — are you referring to other people copying content from a post or page on spanishmediterraneandiet.wordpress.com and then pasting it into their own site?

Yes. That’s absolutely right.
I have since changed my profile to allow only readers I approve, in the hope that this will make a difference? I didn’t really want to do that as I would like to think anyone could have a read. But not to take my work and present it as their own.

If a site is public, there is no way to fully protect your content. Marking a site private (as you have done) will mean the content isn’t visible to the public, only people you choose. Although it’s important to note that doing so won’t remove your content from existing search results.
I didn’t really want to do that as I would like to think anyone could have a read.
If you would rather keep the site public, we have several tips for preventing content theft:
Including a clear copyright notice is something many people to do. The footer of slide-out sidebar underneath the main menu could be ideal places to add one.
