IP address, email and GDPR

Hi all,
I would like to know if it’s possible via a parameter, to ask WordPress.com to not collect IP address of people comments on my blog or if they want to contact me.
In this case, it will be only WordPress.com responsability if it collects this IP address.
So, I conclude that if :
1) I don’t ask people’s e-mail who want to comment or to contact me,
2) I don’t see IP address of people comments on my blog, or who want to contact me,
3) I don’t use Google Analytics or similar,my blog doesn’t process any personal data and so doesn’t have to apply the GDPR.
The blog I need help with is: (visible only to logged in users)
