Is it possible to display summaries of posts under categories on the menu?

I would like to display a summary of posts under a category, or in a month, rather than the whole post. Is it possible to do so?

This is something that is theme-dependent. There are themes that display excerpts instead of full posts.
You can also use the “more tag” in each post to force any listing of posts to only show content above the shortcode.
